Ginger biscuits are always a favourite.
I found a recipe which was so easy even I could make them and then modified it a bit as I like a little crunch on the edges and lots of ginger. For those who have asked and who are hungry try this.
You will need
1 cup of self raising flour
1/2 cup of brown sugar. (adds a little crunch)
1 level teaspoon of baking powder
60g butter (soft)
1 heaped teaspoon ground ginger ( I like more like a level tablespoon)
2 teaspoons of golden syrup.
1 large egg (or two small)
Utensils you need
Large mixing bowl
Wooden spoon
Teaspoon
large flat baking tray
Baking paper
What you need to do
Preheat oven to 180 degrees C - fan on
Mix all ingredients except egg in bowl with wooden spoon.
Beat egg and slowly mix into ingredients until a stiff batter consistency.
If too wet add a little more flour and sugar. Should just drop off a teaspoon.
Cover tray with baking paper
Using teaspoon drop walnut sized drops onto sheet leaving enough space to spread.
Bake in oven for 15 - 20 minutes - if you prefer softer biscuits
If you prefer crunchy edges etc bake for 10 - 15 minutes until just light brown
Remove from oven allow to cool for 10 minutes
Return to oven for another 15 minutes or until edges turn darker brown
Remove from oven leave on tray for 10 minutes
Remove from tray onto cooling rack - trying not to test at least one!
All done in 30 to 40 minutes.
