Many will know of my love affair with good scones, especially on a Saturday morning sitting at my favourite table at Ferryman's Cafe. Alas, with the current circumstances I am not able to enjoy that weekly ritual so I had to gain comfort from making scones at home.
I like things simple in the kitchen and this method is just that, and it turns out good scones too.
What you need
3 cups self raising flour
2 teaspoons baking powder
2 table spoons icing sugar
200ml thickened cream (room temperature)
Milk to brush tops
What you do
Preheat oven to 200 C Fan forced.
Lightly dust a sheet of baking paper and place on tray with high sides (4-5cm)
Sift Flour baking powder icing sugar in a large mixing bowl. Mix well
Add thickened cream. (keep remainder for service). It comes in a 300ml container!
Add 1/2 cup (125ml) cold water. Cut and fold mixture just until it comes together.
Lightly flour hands and form mixture into a ball. Knead lightly until smooth and slightly springy.
Important not to overwork the mixture
Mould dough into a block or round about 2cm thick.
Cut with spatula or cutter and place in baking tray. Keep scones close to each other and to edges of tray . This helps then rise.
Brush tops with milk, bake for 12 to 15 minutes in top section of oven until golden brown on top.
Serve direct from oven or cool on a rack for later
How to fully enjoy
Whisk remainder of cream in bowl to a thick consistency
Serve with berries, I prefer fresh strawberries or raspberries. Berries go on top of cream!
If not available then a good fruity strawberry or raspberry jam will suffice. Cream goes on top of jam!
Ferryman's served a great raspberry jam, it had a kick to it which countered the richness of the cream. Try adding a little lime juice to your jam if it is really sweet, mix well, it does kick the taste buds.
These can be warmed in microwave - 4 scones about 30 seconds. Split in two after warming
They can also be frozen for use later. This mix makes 12 medium sized scones.
Go on you owe it to yourself, be a little decadent to give yourself a lift.
Tasty and easy for kids to make too.
