We managed to get some oranges a week or so ago but found them to be a bit dry and lacking flavour (only to find that they were from USA), no Aussie ones in stock mores the pity. So having endured the first three the last one hung around. I found a use for it and made a rather good and very simple cake. Even the "Boss lady" liked it.
1 seedless orange with the skin. I used a large Navel variety.
3 eggs at room temperature
1/4 cup + 2 table spoons of Vegetable oil. I used Extra Virgin Olive oil.
1/2 cup of granulated white sugar
1 table spoon of brown sugar. For those with a sweet tooth or for oranges which are a bit tart.
2 cups of self raising flour

What you do.
Cut Orange into segments and then each one in half. Don't peel it, the peel and pith adds to flavour.
Remove any excessive pith in the centre and each end stem base.
Blend orange pieces, eggs, oil and sugar. I used a stick blender and went to town until a smooth mix.
Pour the mixture into a large mixing bowl
Slowly add a half cup at a time of flour and fold in just until mixed together. Don't over mix it.

Pour this thick mixture into a 23cm x 13cm (9 inch) loaf tin which has been lined with baking paper or greased and floured if you prefer.
Bake in a preheated oven at 170C (with fan) for 40 minutes or until knife comes out clean from centre. Remove from oven, leave for 5 minutes, then turn out onto a cooling rack.
