Do you need a sugar hit? Do you desire something sweet? Do you want to keep the kids off your back for a while? If any of your answers is yes, then try this for fun. It brings back childhood memories. Home made honeycomb, with or without chocolate coating, 'tis good.
OK - SAFETY FIRST
When boiling the sugar mix it is extremely hot, as sugar boils at a higher temperature than plain water. Sugar burns and burns badly as it sticks to you. PLEASE BE CAREFUL.
A quick way to reduce the effect if you are unlucky enough to get burnt, is to immerse the finger, hand or whatever under running cold water for at least 2 minutes and then ice the injured area for 5-10 minutes. A bag of frozen peas will suffice!
What you need
Large saucepan, and I mean LARGE.
1/2 cup (125g) Golden Syrup or Corn Syrup. Alternative is to use 100g of Honey. It does alter taste.
1/2 cup white sugar
1 1/2 teaspoons bicarb of soda (also known as baking powder)
What you do
Line a large shallow tray with foil coated in a tasteless oil. I used spray olive oil and it worked.
If you have a good cooking thermometer that goes past 160C then pop this in the saucepan.
Add sugar and syrup, mix well and heat slowly until all combined. Stir with a heatproof spoon.
If you have a thermometer heat to Hard Crack Point 149C. If not bring to boil and maintain for about 30 seconds making sure it doesn't burn at the bottom.
Remove from heat and turn heat off.
Add Bi Carb Soda and quickly stir very well and quickly to fully combine the mixture
Mixture will foam up suddenly and at least double if not triple in size. Hence the Large Pot advice.
Whilst still hot turn out carefully onto the tray lined in foil and coated with oil.
This is where you should be especially careful not to spill any on yourself.
Allow to cool, then remove from tray and remove foil
At this stage you can break into pieces, and eat as it is or if you wish you can melt some chocolate and dip the pieces in, setting aside on a tray covered in baking paper to set/cool. (I didn't this time).
Alternatively liberally sprinkle drinking chocolate over the pieces.
Place in an airtight container and keep in fridge, if the kids haven't pinched it all by now!
