Munns's Munchies - Banana Bread

Banana Bread - served warm with lashings of butter, who can resist it, but I add a couple of extras to making it interesting.  This recipe is simple and very tasty so here goes.



You will need

2 1/2 cups of self raising flour
3/4 cup of brown sugar
1 cup milk (room temperature)
2 tablespoons butter (soft)
1 teaspoon vanilla essence
3 well ripe bananas

(Optional)
1/4 to 1/2 cup shredded coconut
cinnamon sugar (as a topping)
1/4 cup chopped walnuts - for a bit of crunch

Utensils you need

Large mixing bowl
Wooden spoon
Loaf baking tin  - medium size
Baking paper


What you need to do

Preheat oven to 180 degrees C  - fan on
Slice up the two ripest bananas, leave the third for topping.
Mix ingredients using only half coconut and without cinnamon sugar with wooden spoon
into a thick batter consistency. I like to leave a few small lumps of banana for texture


Line loaf tin (medium size) with baking paper
Pour the mixture into the loaf tin

Slice up the third banana into approx 50mm slices
Place these along top of wet mixture
Sprinkle remaining coconut over the top of mixture
Top with a generous sprinkle of cinnamon sugar

Bake in oven for 30 - 40  minutes 
Or until a knife comes out clean from centre of loaf.

Remove from oven allow to cool for 10 minutes

Remove from tray onto cooling rack 


Serve warm on its own or with butter even cream if you want to be really naughty!
