Savoury Slice – a snack a nibble or just comfort food in-front of the TV!

Still not travelling far so having finished with the football finals (all codes) and Bathurst, I am now in the midst of the Rugby League World Cup, F1 and Moto-GP racing with the Spring Racing Carnival thrown in by “She who must be obeyed”.  I found a few sheets of puff pastry in the freezer, (they HAD to be used), and some left overs in the fridge.  Aha I thought, what can I come up with, just as something to nibble on in front of the TV!  Here we go I will call them Savoury Slices or Savoury Squares depending on your cut, only problem was, they didn’t last long - food to savour!  😋

Full sheet after cooking
Sliced from half sheet

What you need:-
Minimum 3 sheets of Puff Pastry (frozen is easy):  Grated Cheese. (can use thinly sliced):  Vegemite. (If you like it): Sliced ham or bacon. (could use sliced salami, Hungarian even sausage:  Bolognese sauce (straight from the jar or cooked with some mince): Ground Garlic: Garlic Butter: Ground Black pepper: Ground Parmesan: Cheese: Sesame or Poppy seeds.
Large flat baking tray:  Greaseproof paper:

Ingredients
What to do:-
Pre- heat oven to 240-250 deg C.  Lay half sheet of pastry straight from the freezer on sheet of greaseproof paper on the baking tray.      Sprinkle ground garlic to taste over pastry.    Add your choice and amount of cheese, don’t worry if it goes over the sides, it goes nice and crunchy after cooking.   Add some sliced ham , bacon or other meat to your choice. I have used ham or bacon so far.

Base sheet with cheese ham and ground garlic

Take another half sheet of pastry and coat one side with a good thick layer of Vegemite, lay this vegemite down on the first sheet and its topping.

Second sheet of pastry spread with Vegemite
On top of this sheet of pastry add a layer of Bolognese sauce, some more cheese and a liberal grind of black pepper.
Second sheet with sauce and cheese
Spread another half sheet with garlic butter (to taste) which has been slightly warmed to make it easier to spread, and lay garlic butter side up on the other sheets.    Sprinkle some more grated cheese, a few teaspoons of any remaining Bolognese sauce on top of sheet.      Add a liberal sprinkle of ground parmesan cheese and top with either sesame and/or poppy seeds, your choice.
Top layer with cheeses and topping - ready to bake
Bake in hot fan oven for about 20 – 25 minutes or until edges of pastry lift and brown off.  Careful as easy to burn.      Remove from oven, allow to partially cool and slice into slices or squares still on baking tray and paper, its easier.      Really tasty hot and also cold, can be kept in airtight container for a day or two but for best results reheat in conventional oven.

Sliced  in squares after part cooling
I had to taste test them !!
Notes:  I have made these with full sheets of pastry and half slices, I prefer to use half slices, as they cook through better and you can make a second batch with alternative fillings while the first is cooking.
If you haven’t any left-over sauce try a combination of BBQ sauce and tomato sauce, it is quite tasty. You could even liven them up with sweet chilli sauce if you like some spice in your life!  This is a recipe that you can vary easy to your taste, why not try some sliced onions or shallots, whatever you use I hope you enjoy.
